We will realise very soon a new crop of cocktail cities will claim their rightful place.

Beyond to the usual major metro areas known for strong cocktail culture (NYC, by which I mean Manhattan, London, San Francisco, Barcelona, etc.) we’re going to see other cities taking center stage with risk-taking cocktail culture that is hard-pressed to thrive in the larger, more expensive cities.  Expect to add Vancouver (which is getting its own Tales of the Cocktail soon!), Portland, Paris , Moscow (where will host the fist bar show in Sept ’11)and yes, Singapore, Sidney to the end up in the far est.

Tiki will continue its explosion….before flaming out. I will rec the first half of 2011 is going to see tiki bars, tiki cocktails, and tiki culture continue its rapacious, raucous expansion. By the second half of the year, it will be considered over-exposed and played out.

Today’s backyard tiki bars, tiki torches and tiki themed parties, can all find their roots in an outlandish trend from the 1950s.

Tiki has come to symbolise the point where fun and bad taste meet. It was an outlandish and unlikely ‘50s trend, with surprising origins.

The best combination of Tiki style and molecular mixology still the Nottingham Forest in Milan run by the legendary Dario Comini, who combine the scientific knowledge with a unique polynesian vibe.
